Hello friends!

Can you believe it’s almost May already?! Time has been flying at my new job; I quickly realized this past weekend that it’s been over two weeks and I had yet to bake anything for my new co-workers.

Obviously I had to get right to work to remedy this problem. It feels like ages since I baked up some fresh cookies, and as always my need to throw sprinkles into everything took hold of me.

These cookies would be great for  any day every day for a birthday party, a potluck, or even any Mother’s Day plans you’ve got in store in the next few weeks.

If you’ve ever thought about throwing an entire funfetti-themed birthday party, these cookies would go great with these blondies and these cupcakes.

You may have to buy up all the sprinkles your grocery store has in stock, but I mean, there are stranger things you could do.

Like not eat each and every one of these cookies.

They were a smash hit at work so I’m sure you’ll love them too! They’re like tiny, fluffy, funfetti pillows.

Chocolate Drizzled Funfetti Cookies

  • 2 ¼ cups flour
  • 1 tsp baking soda
  • 2 tsp cornstarch
  • 3/4 tsp salt
  • ¼ cup rainbow nonpareils or other sprinkles
  • 1/2 cup (1 stick) butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 tsp vanilla
  • 1/4 cup melted milk chocolate
  • 1/4 cup melted white chocolate
  • additional rainbow sprinkles, optional
  1. Preheat oven to 350 degrees and line two baking sheets with parchment paper. In a medium bowl, combine flour, baking soda, cornstarch, and salt until well mixed. In a small bowl, use a tablespoon of this flour mixture to coat the rainbow sprinkles.
  2. In the bowl of your stand mixer (or a large bowl with a hand mixer) beat butter and sugar until light and fluffy, approx 3-5 minutes. Scrape bowl as needed.
  3. Beat in eggs, one at a time, followed by vanilla, until well incorporated. Slowly mix flour mixture into butter mixture, scraping down the sides of the bowl as needed. Stir in rainbow sprinkles. Cover bowl and place dough in fridge to chill for 30 minutes.
  4. When ready to bake, preheat oven to 350 degrees. Scoop out rounded tablespoons of dough and place at least 2 inches apart on a parchment paper lined baking sheet. If desired, press down with the back of a glass to flatten slightly before baking.
  5. Bake at 350 degrees for 10-12 minutes. The edges will be firm but the center will still seem a bit soft. Remove from oven and let cool on the pan for 2-3 minutes before carefully moving them to finish cooling completely on a cooling rack.
  6. Once cooled, drizzle melted chocolate over the top of each cookie, then top with additional rainbow sprinkles.
